About the Producer
Diego Bermudez is a pioneering Colombian coffee producer known for his innovative and scientific approach to coffee processing at Finca El Paraíso in Cauca. Using advanced fermentation techniques, he employs stainless steel bioreactors to precisely control variables like temperature, pH, and microbial activity, creating unique and complex flavor profiles. His multi-stage process includes anaerobic fermentation, juice extraction, thermal shock washing, and controlled low-temperature drying, resulting in coffees with intense fruit-forward notes. Bermudez's groundbreaking methodologies have redefined specialty coffee and influenced processing techniques worldwide.
ABOUT THE COFFEE:
This coffee is a pre blend of green through 4-6 lots. Processed through shocked washed, the flavor of the coffee is controlled and layered, depending on how you extract will determine taste. Espresso is very balanced and smooth, the tropical fruits really shine and is very forgiving when dialing in shots. This is a great house filter option as well, as it is reminiscent of traditional house batch serving deep chocolate and bouncy body, with a modern touch of being a light roast coffee adding that bit of spiced apple throughout.
