METHOD

Fold the hem of your paper filter and place it in your brewer. Wet your filter with at least 100ml of water.
NOTE: don't let the water drain over your cup or carafe, if you don’t forget to drain your cup or carafe!

Heat your kettle to 92°C.

Using your scales, grind 20g of coffee to medium coarse, and disperse evenly into the pre-soaked filter.

Start your timer and pour 50g of water in a spiral/circular motion to wet the entire coffee bed as your "bloom”.

After 30 seconds, continue to pour 90g of water with the same motion roughly every 30 seconds or until each pour has almost drained. Repeat until you've reached your 360g total yield.

Once all the water has drained, remove your brewer from the cup or carafe and enjoy your coffee.
